Beta-ionone is a colorless to light yellow liquid with an odor of cedar wood; in very dilute alcoholic solution, its odor resembles violets. It is widely used as a fragrance and flavoring ingredient, as well as a key intermediate in the synthesis of vitamins A, E, and K.
