Glyceryl stearate, also known as glycerol monostearate (GMS), is a monoglyceride commonly used as an emulsifier in food. It appears as a white, odorless, sweet-tasting flaky powder that is hygroscopic, and is chemically the glycerol ester of stearic acid.
